A comforting gluten-free casserole combining the classic flavors of a cheeseburger with layers of ground turkey, veggies, and melty cheese.

  • 1 pound ground turkey
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup diced tomatoes
  • 1 cup cauliflower rice
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil over medium heat in a skillet.
  3. Add chopped onion, bell pepper, and garlic. Sauté until softened.
  4. Stir in ground turkey. Cook until browned. Season with Italian seasoning, salt, and pepper.
  5. Combine diced tomatoes and cauliflower rice until mixed well.
  6. Transfer mixture to a baking dish. Sprinkle shredded cheese on top.
  7. Bake in the oven for about 25-30 minutes, until the cheese is bubbly and slightly golden.
  8. Serve warm and enjoy!
