- 2 large sweet potatoes, peeled and cubed
- 1 cup green or brown lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Preheat the oven to 400°F (200°C).
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
- Add garlic, thyme, and rosemary, and cook for another minute.
- Add lentils and vegetable broth, bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes.
- Meanwhile, boil sweet potatoes in a separate pot until tender, about 15 minutes. Drain and mash with salt and pepper.
- Once lentils are cooked, season with salt and pepper, then transfer to a baking dish.
- Spread the mashed sweet potatoes over the lentil mixture.
- Bake in the preheated oven for 25-30 minutes, until the top is slightly golden.
- Let cool for a few minutes before serving.
Notes
- For a spicier version, add red pepper flakes to the lentil mixture.
- This dish can be made ahead of time and reheated.
- Feel free to add other vegetables like peas or corn for extra nutrition.
