Sweet Potato & Lentil Shepherd’s Pie

A hearty and healthy comfort food recipe made with sweet potatoes and lentils.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup green or brown lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  3. Add garlic, thyme, and rosemary, and cook for another minute.
  4. Add lentils and vegetable broth, bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes.
  5. Meanwhile, boil sweet potatoes in a separate pot until tender, about 15 minutes. Drain and mash with salt and pepper.
  6. Once lentils are cooked, season with salt and pepper, then transfer to a baking dish.
  7. Spread the mashed sweet potatoes over the lentil mixture.
  8. Bake in the preheated oven for 25-30 minutes, until the top is slightly golden.
  9. Let cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the lentil mixture.
  • This dish can be made ahead of time and reheated.
  • Feel free to add other vegetables like peas or corn for extra nutrition.
