  • 2 cups gluten-free all-purpose flour
  • 1 cup mashed potatoes
  • 1/4 cup milk (or dairy-free alternative)
  • 1/4 cup olive oil
  • 2 tablespoons honey (or sugar)
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)

Instructions

  1. In a bowl, combine the warm milk and honey, then sprinkle the yeast on top and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the gluten-free flour, mashed potatoes, salt, garlic powder, and onion powder.
  3. Add the yeast mixture and olive oil to the dry ingredients and mix until a dough forms.
  4. Cover the bowl with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat the oven to 350°F (175°C).
  6. Transfer the dough to a greased loaf pan and smooth the top.
  7. Bake for 30-35 minutes or until the bread is golden brown and sounds hollow when tapped.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
