  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1.5 cups gluten-free flour blend
  • 0.5 cup maple syrup (optional)
  • 0.5 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the mashed ripe bananas, unsweetened applesauce, and vanilla extract until well mixed.
  3. In a separate bowl, whisk together the dry ingredients: gluten-free flour blend, baking soda, baking powder, cinnamon, and a pinch of salt.
  4. Gradually fold the dry mix into the wet ingredients until just combined. Add maple syrup and any optional mix-ins if using.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Slice and serve!
