  • 1/2 cup coconut oil, melted
  • 1 cup brown sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the pumpkin puree, melted coconut oil, brown sugar, almond milk, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
