A hearty, gluten-free meatloaf stuffed with Italian flavors, featuring ground beef, pork, and melted cheese, perfect for family gatherings.

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup certified gluten-free bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped roasted red peppers
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the ground beef, ground pork, bread crumbs, Parmesan cheese, roasted red peppers, mozzarella cheese, parsley, garlic, egg, Italian seasoning, salt, and pepper until well combined.
  3. Shape the meat mixture into a loaf and place it in a baking dish.
  4. Bake for 45-60 minutes, or until the internal temperature reaches 160°F (70°C).
  5. Heat the marinara sauce in a saucepan while the meatloaf is baking.
  6. Let the meatloaf rest for 10 minutes before slicing.
  7. Serve slices of the meatloaf with the marinara sauce on top.

Notes

Use gluten-free certified ingredients to prevent contamination. Allowing the meatloaf to rest helps retain its juices.
