A vibrant blend of grilled chicken, sweet corn, bell peppers, and fluffy rice, topped with cilantro and queso fresco.

Ingredients

  • 1 cup cooked rice
  • 1 cup grilled chicken, diced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled queso fresco
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add corn and red bell pepper, sauté for about 5 minutes.
  3. Combine cooked rice, grilled chicken, sautéed corn and bell pepper in a large bowl.
  4. Add lime juice, cilantro, and mix well.
  5. Season with salt and pepper to taste.
  6. Top with crumbled queso fresco before serving.
