Ingredients

Scale
  • 1 cup Unsalted Butter
  • 1 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Molasses
  • 1 1/2 cups All-Purpose Gluten-Free Flour
  • 2 cups Old-Fashioned Gluten-Free Oats
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Ground Cinnamon (optional)
  • 1/4 teaspoon Salt
  • 1/2 cup Freeze-Dried Strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
  2. Cream together the unsalted butter, brown sugar, and granulated sugar until fluffy and well combined.
  3. Add the large egg and vanilla extract, mixing until fully incorporated.
  4. Pour in the molasses and mix until the mixture is smooth.
  5. Whisk together the all-purpose flour, baking soda, ground cinnamon (if using), and salt in a separate bowl.
  6. Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined.
  7. Fold in the old-fashioned oats and freeze-dried strawberries to the dough gently.
  8. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving space between each cookie.
  9. Bake in the preheated oven for 12-15 minutes or until edges are lightly golden.
  10. Remove the cookies from the oven and let them cool on the sheet for 5 minutes before transferring to a wire rack.
  11. Allow the cookies to cool completely before icing.
  12. Prepare the icing using additional freeze-dried strawberries, blending them into a powder and mixing with a bit of water to achieve the desired consistency. Drizzle the icing over cooled cookies.
