Delightful and refreshing Strawberry Cream Sandwiches made gluten-free, perfect for summer gatherings or a light afternoon snack.

  • 12 Strawberries
  • 1 pint Heavy Whipping Cream
  • 8 oz. Cream Cheese (softened to room temp)
  • 1/4 cup Powdered Sugar (or more to taste)
  • 1/4 tsp Vanilla
  • 1 tbsp Lemon Zest
  • 8-10 slices Gluten-Free White Bread

Instructions

  1. Wash the strawberries thoroughly, hull, and dry them completely.
  2. Whip the cream cheese on high until light and fluffy (2-3 minutes).
  3. Add the heavy cream, vanilla, and sugar, and continue whipping on high until the whipped cream is set stiff, scraping down the sides as needed.
  4. Add lemon zest and stir to combine.
  5. Spread a layer of the cream mixture on each piece of bread.
  6. Arrange the strawberries on half of the bread slices.
  7. Add more cream mixture on top, then place another slice of bread on top and gently press together.
  8. Score a line in the diagonal direction with a knife.
  9. Wrap each sandwich in plastic wrap and refrigerate for 2 hours to set.
  10. Once chilled, cut the edges off, and then make a diagonal cut along your scored line.

Use fresh, ripe strawberries for the best flavor. Adjust the sweetness of the cream to taste by modifying the powdered sugar.
