Warm and fluffy French toast stuffed with a luscious cream cheese and strawberry filling, perfect for a delightful breakfast.

  • 4 slices of gluten-free brioche bread
  • 4 oz cream cheese, softened
  • 1 cup strawberries, chopped
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon cinnamon
  • Butter for frying
  • Maple syrup for serving

Instructions

  1. Mix the softened cream cheese, chopped strawberries, sugar, and vanilla extract until well combined.
  2. Take two slices of brioche bread and spread the strawberry cream cheese mixture on one side of each slice. Top with the other slices to create a sandwich.
  3. Whisk together the eggs, milk, and cinnamon in another bowl.
  4. Heat a skillet over medium heat and add butter.
  5. Dip each stuffed sandwich in the egg mixture, allowing it to soak briefly.
  6. Place in the skillet and cook until golden brown on both sides, about 3–4 minutes per side.
  7. Serve warm with maple syrup.
