  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup fresh strawberries, chopped
  • 4 oz cream cheese, softened
  • 1/4 cup buttery crumb mixture (for topping)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Combine flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Mix milk, vegetable oil, and egg in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in chopped strawberries.
  6. Mix softened cream cheese in a separate bowl until smooth.
  7. Fill each muffin cup halfway with batter, add a spoonful of cream cheese, and then top with more batter until almost full.
  8. Sprinkle the crumb mixture on top of each muffin.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Allow cooling slightly before serving.
