Fresh and colorful spring rolls filled with crisp vegetables and served with a rich peanut sauce, perfect for gluten-free diets.

Ingredients

  • Rice paper wrappers
  • Lettuce leaves
  • Carrots, julienned
  • Cucumber, julienned
  • Bell peppers, sliced
  • Fresh herbs (mint, cilantro, or basil)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Garlic, minced
  • Water

Instructions

  1. Prepare all your fresh vegetables and herbs by washing and cutting them into thin strips.
  2. Soak a rice paper wrapper in warm water for about 10-15 seconds until it’s soft.
  3. Lay the softened wrapper on a clean surface.
  4. Place a lettuce leaf in the center of the wrapper, followed by a handful of your assorted vegetables and herbs.
  5. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom to the top.
  6. Repeat the process until all the ingredients are used.
  7. For the peanut sauce: in a bowl, mix together peanut butter, soy sauce, lime juice, minced garlic, and a little water to achieve a smooth consistency.
  8. Serve the spring rolls with the peanut dipping sauce.

Notes

Make sure all ingredients are certified gluten-free to prevent any hidden gluten. Adjust peanut sauce consistency by varying the water amount as desired.
