  • 1 cup Fresh Spinach (chopped finely)
  • 1 large Egg (beaten for egg wash)
  • 2 cups All-purpose Flour (or gluten-free flour)
  • 1 tbsp Baking Powder
  • 1 tsp Garlic Powder (optional)
  • 1 tsp Salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
  2. Combine cottage cheese, chopped spinach, and beaten egg in a large bowl; mix well.
  3. Whisk together flour, baking powder, garlic powder (if using), and salt in a separate bowl.
  4. Gradually add dry ingredients to the wet mixture; stir until a dough forms.
  5. Knead the dough gently on a floured surface until smooth.
  6. Divide the dough into equal portions and shape each piece into a flat bagel shape.
  7. Place the bagels on the prepared baking sheet and brush the tops with any remaining beaten egg.
  8. Bake for 20-25 minutes, or until golden brown.
