  • 1 tbsp lime juice

Instructions

  1. Dice 4 large peeled potatoes into 1-inch cubes.
  2. Heat 1 tbsp vegetable oil in a large skillet over medium-high heat.
  3. Add potatoes and cook, stirring occasionally, until tender and golden brown (15-20 min).
  4. Incorporate 1 tsp salt, 1 tsp smoked paprika, 1 tsp chili powder, 1/2 tsp cumin, and 1/4 tsp cayenne pepper in a small bowl, stirring to combine.
  5. Add the remaining 1 tbsp vegetable oil and minced garlic to the skillet; cook for 1 min until fragrant.
  6. Sprinkle spice mixture over the potatoes; toss to coat and cook for an additional 2-3 min, ensuring spices are toasted but not burnt.
  7. Remove from heat, stirring in 1 tbsp lime juice until well mixed.
  8. Garnish with fresh cilantro and serve warm.
