Ingredients

  • 1 can (13.5 oz) of coconut milk
  • 2 tablespoons of red curry paste
  • 2 cups of vegetable broth
  • 1 cup of mixed vegetables (bell peppers, carrots, broccoli)
  • 1 tablespoon of soy sauce
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Combine the vegetable broth and coconut milk in a large pot, and bring to a simmer over medium heat.
  2. Stir in the red curry paste and soy sauce until well mixed.
