A colorful and flavorful gluten-free pasta salad featuring fresh vegetables and a zesty dressing. Perfect for any occasion!

Ingredients

  • 2 cups cooked gluten-free pasta
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Combine in a large bowl the cooked gluten-free pasta, bell peppers, cherry tomatoes, corn, red onion, and cilantro.
  2. Whisk together in a separate small bowl the olive oil, lime juice, taco seasoning, salt, and pepper.
  3. Pour the dressing over the pasta and vegetables, tossing to combine.
  4. Serve immediately or chill in the refrigerator for an hour before serving.
