Sheet Pan Shrimp Fajitas

A quick and flavorful meal bringing together shrimp, bell peppers, and spices, all baked on a single sheet pan.

Ingredients

  • 1 lb medium to large shrimp (peeled and deveined)
  • 3 bell peppers (seeded and sliced; red, green, and yellow)
  • 1 onion (sliced)
  • 2 Tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp lime juice (about 1 lime)
  • 1/4 cup cilantro (chopped)
  • Optional toppings: avocado, salsa, sour cream, cheese
  • Serve with warm tortillas or lettuce cups

Instructions

  1. Preheat the oven to 425 degrees F and coat a large sheet pan with nonstick spray.
  2. Drizzle olive oil over the shrimp and veggies in a large bowl.
  3. Toss everything with the spices, salt, and pepper until evenly coated.
  4. Spread the shrimp and veggies in an even layer on the pan.
  5. Bake for 8 to 10 minutes, or until the shrimp are pink and opaque. For softer veggies, cook for about 10 minutes before adding shrimp.
  6. Drizzle with lime juice and sprinkle with cilantro.
  7. Serve with warm tortillas or lettuce cups and desired toppings.

Notes

For extra flavor, marinate the shrimp for 30 minutes. You can also add other vegetables like zucchini or corn.
