  • 2 cloves Minced Garlic
  • 2 pcs Sliced Chilies (optional)
  • 1 tbsp Brown Sugar
  • 1 tbsp Lime Zest
  • 4 fillets Cod Fillets
  • 4 cups Fresh Spinach Leaves
  • 1/4 cup Fresh Cilantro (garnish)

Instructions

  1. Combine coconut milk and chicken broth in a large pot.
  2. Add fish sauce, lime juice, grated ginger, minced garlic, and sliced chilies to the pot.
  3. Stir in brown sugar and lime zest until combined.
  4. Bring the mixture to a gentle simmer over medium heat.
  5. Add the cod fillets, ensuring they are submerged in the broth.
  6. Cover the pot and let it gently poach for about 8 minutes, or until the fish flakes easily with a fork.
  7. Toss in the fresh spinach leaves and allow them to wilt for 1-2 minutes.
  8. Serve the cod and spinach hot, garnished with fresh cilantro.
