A hearty and vibrant skillet dish featuring tender chicken simmered in a creamy, tangy sauce with pepperoncini peppers.

  • 4 pieces Boneless, skinless chicken breasts (or thighs)
  • 1 cup Pepperoncini peppers
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 1 cup Low-sodium chicken broth
  • 1/2 cup Heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Red pepper flakes
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Fresh parsley
  • 2 cups Cooked pasta or rice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts (or thighs) with salt, black pepper, and Italian seasoning.
  3. Add the chicken to the skillet and cook until golden brown, about 5-7 minutes per side, until fully cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced yellow onion and sauté until translucent, about 3-4 minutes.
  6. Add the minced garlic and sauté for another minute until fragrant.
  7. Stir in the pepperoncini peppers and red pepper flakes, cooking for an additional 2 minutes.
  8. Pour in the chicken broth and scrape the bottom of the skillet to release flavors.
  9. Reduce heat and stir in the heavy cream, bringing the mixture to a gentle simmer.
  10. Return the chicken to the skillet, spooning sauce over it.
  11. Let it simmer together for about 5 minutes, allowing the flavors to meld.
  12. Garnish with fresh parsley before serving it over cooked pasta or rice.
