  • 1 cup chickpea flour
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped spinach
  • 1/4 cup chopped onions
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. In a mixing bowl, combine chickpea flour, water, salt, turmeric, cumin, and black pepper to form a smooth batter.
  2. Add chopped spinach and onions to the batter and mix well.
  3. Heat a non-stick skillet over medium heat and add a little olive oil.
  4. Pour a ladleful of batter onto the skillet and spread it into a round shape.
  5. Cook for 3-4 minutes until the edges start to lift, then flip and cook for another 2-3 minutes.
  6. Repeat with the remaining batter, adding more oil as needed.
  7. Serve warm with your favorite dipping sauce or chutney.

Notes

  • For a spicier version, add chopped green chilies to the batter.
  • These pancakes can be stored in the refrigerator for up to 2 days.
