  • 3 large eggs
  • 1/4 cup olive oil
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon dried herbs (e.g., oregano, thyme, or rosemary)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together almond flour, baking powder, salt, dried herbs, garlic powder, and onion powder.
  3. In another bowl, beat the eggs and then add olive oil, mixing well.
  4. Pour the wet mixture into the dry ingredients and stir until a dough forms. If using, fold in the shredded cheese.
  5. Pour the dough into the prepared loaf pan, smoothing the top.
  6. Bake for 30-40 minutes, or until golden brown and a toothpick comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and serve once cooled.

Store leftover bread in an airtight container in the refrigerator for up to one week, or freeze for up to four months.
