A hearty and healthy soup combining sausage, sweet potatoes, and kale for a nutritious meal.

Ingredients

  • 1 lb sausage (Italian or your choice)
  • 2 medium sweet potatoes, peeled and diced
  • 4 cups kale, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the sausage over medium heat until browned.
  2. Add the onion and garlic, cooking until the onion is translucent.
  3. Stir in the sweet potatoes and cook for about 5 minutes.
  4. Add the chicken broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes, or until sweet potatoes are tender.
  6. Add the kale and cook for an additional 5 minutes until wilted.
  7. Serve hot and enjoy!
