  • 2 cups salsa verde
  • 1 cup brown rice, uncooked
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup low-fat shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish with cooking spray.
  3. Place the chicken breasts in the baking dish.
  4. Season the chicken with cumin, garlic powder, salt, and pepper.
  5. Spread the brown rice evenly over the chicken.
  6. Pour the salsa verde on top of the rice and chicken.
  7. Add the black beans and corn, ensuring even distribution.
  8. Cover the dish tightly with aluminum foil.
  9. Bake in the preheated oven for 45 minutes.
  10. Remove the foil and top with shredded cheese.
  11. Bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  12. Garnish with fresh cilantro before serving.

Notes

For extra flavor, marinate the chicken in salsa verde for 30 minutes before baking. You can use quinoa instead of brown rice for a lighter option.
