  • 1 rotisserie chicken, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and sliced mushrooms; cook until the mushrooms are softened, about 4 minutes.
  4. Pour in the chicken broth, bringing the mixture to a simmer.
  5. Add the shredded rotisserie chicken and dried thyme; stir to combine.
  6. Season with salt and pepper to taste.
  7. Simmer for 15 minutes, allowing flavors to meld.
  8. Stir in the heavy cream and heat through, about 5 minutes.
  9. Serve hot, garnished with freshly chopped parsley.
