  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup raspberry puree
  • 1/4 cup powdered sugar
  • Oil for frying

Instructions

  1. In a large bowl, mix together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, melted butter, egg, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  6. Remove donuts and drain on paper towels.
  7. In a separate bowl, mix cream cheese, raspberry puree, and powdered sugar until smooth.
  8. Once donuts are cool, fill them with the raspberry cheesecake mixture using a piping bag.
  9. Serve and enjoy!

Notes

  • Make sure the oil is hot enough before frying to avoid greasy donuts.
  • For a sweeter filling, adjust the amount of powdered sugar to taste.
  • These donuts are best served fresh but can be stored in an airtight container for a day.
