  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, bell peppers, peas)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  3. In a large bowl, mix cooked quinoa, mixed vegetables, breadcrumbs, Parmesan cheese, parsley, garlic, salt, pepper, paprika, and beaten egg.
  4. Form the mixture into small balls or patties.
  5. Place the bites on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let cool slightly before serving.
