- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, bell peppers, peas)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 egg, beaten
- Preheat the oven to 375°F (190°C).
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
- In a large bowl, mix cooked quinoa, mixed vegetables, breadcrumbs, Parmesan cheese, parsley, garlic, salt, pepper, paprika, and beaten egg.
- Form the mixture into small balls or patties.
- Place the bites on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
