  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, bell peppers, peas)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. In a large bowl, mix cooked quinoa, mixed vegetables, breadcrumbs, Parmesan cheese, parsley, eggs, garlic powder, salt, and pepper.
  5. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let cool slightly before serving.
