Pumpkin Snickerdoodle Protein Bites

Delicious and healthy snack recipe packed with protein and the flavors of pumpkin and cinnamon.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. In a large bowl, combine pumpkin puree, almond butter, and honey or maple syrup until smooth.
  2. Add rolled oats, protein powder, cinnamon, nutmeg, and salt. Mix until well combined.
  3. If desired, fold in mini chocolate chips.
  4. Refrigerate the mixture for about 30 minutes to make it easier to handle.
  5. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  6. Store the protein bites in an airtight container in the refrigerator.

Notes

  • These bites can be frozen for longer storage.
  • Feel free to adjust the sweetness by adding more or less honey/maple syrup.
  • For a nut-free version, substitute almond butter with sunflower seed butter.
