- 1 cup pumpkin puree
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1 cup rolled oats
- 1 scoop vanilla protein powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/4 cup mini chocolate chips (optional)
- In a large bowl, combine pumpkin puree, almond butter, and honey or maple syrup until smooth.
- Add rolled oats, protein powder, cinnamon, nutmeg, and salt. Mix until well combined.
- If desired, fold in mini chocolate chips.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Once chilled, scoop out tablespoon-sized portions and roll them into balls.
- Store the protein bites in an airtight container in the refrigerator.
Notes
- These bites can be frozen for longer storage.
- Feel free to adjust the sweetness by adding more or less honey/maple syrup.
- For a nut-free version, substitute almond butter with sunflower seed butter.
