  • 1 cup diced apples
  • 2 cups almond milk (or any milk of choice)
  • 1/2 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, pumpkin puree, diced apples, almond milk, maple syrup, cinnamon, nutmeg, salt, and baking powder.
  3. Mix until well combined.
  4. Pour the mixture into a greased baking dish.
  5. If using, sprinkle chopped nuts on top.
  6. Bake for 30-35 minutes, or until the top is golden and the oatmeal is set.
  7. Let cool for a few minutes before serving.
