Ingredients

Scale
  • 1 pound fresh asparagus (about 24 medium thick spears)
  • Olive oil spray
  • 12 slices prosciutto
  • ¼ teaspoon ground black pepper
  • 2 tablespoons grated parmesan cheese (or parmesan shavings)
  • 1 tablespoon chopped parsley (optional for serving)

Instructions

  1. Preheat the oven to 425°F and line a large sheet pan with foil and a cooling rack. Trim the tough ends of the asparagus and coat the spears with olive oil spray.
  2. Cut the prosciutto slices in half and wrap each half around the asparagus.
  3. Place the wrapped asparagus on the wire rack in a single layer.
  4. Spritz with olive oil and sprinkle with black pepper.
  5. Bake for 8 to 10 minutes until tender-crisp.
  6. Transfer to a platter and garnish with parmesan and parsley.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a preheated oven at 350°F for about 5-7 minutes to crisp them up again.
