Ingredients

  • Corn tortillas
  • Shredded chicken
  • Poblano peppers
  • Cheese
  • Avocado
  • Jalapeños
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the chopped poblano peppers in a skillet until softened.
  3. Add shredded chicken and season with salt and pepper.
  4. Heat corn tortillas in a separate pan.
  5. Stuff each tortilla with the chicken and poblano mixture and cheese.
  6. Place the tacos on a baking sheet and bake until crispy and golden.
  7. Blend avocado and jalapeños until smooth for the salsa.
