A creamy, gluten-free cheesecake combining the rich flavors of pistachio and cream cheese, perfect for any gathering.

Ingredients

  • 1 1/2 cups vanilla wafers, crushed
  • 1/2 cup butter, melted
  • 1 package (3.4 oz) pistachio pudding mix
  • 2 cups whipped cream
  • 1 cup chopped pistachios
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine crushed vanilla wafers and melted butter in a mixing bowl. Press the mixture into the bottom of a pan to form a crust.
  2. Mix the softened cream cheese with powdered sugar and vanilla extract in another bowl until smooth.
  3. Add the pistachio pudding mix and whipped cream to the cream cheese mixture, stirring until well combined.
  4. Fold in chopped pistachios.
  5. Pour the filling over the prepared crust and spread it evenly.
  6. Refrigerate for at least 240 minutes or until set.
  7. Serve chilled, garnished with additional whipped cream and pistachios if desired.
