Ingredients

  • 2 cups cooked rice
  • 1 pound grilled chicken, chopped
  • 1 cup pineapple chunks
  • 1 bell pepper, diced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • Green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Combine in a large bowl the cooked rice, grilled chicken, pineapple chunks, and bell pepper.
  2. Whisk together in a small bowl the soy sauce, honey, sesame oil, salt, and pepper.
  3. Pour the sauce over the rice mixture and toss until everything is well coated.
  4. Serve in bowls, garnished with chopped green onions.

Notes

For extra flavor, marinate the chicken in the soy sauce mixture for at least 30 minutes before grilling.
