Delicious skewers of marinated chicken and caramelized pineapple, perfect for summer BBQs or family dinners.

Ingredients

  • 4 chicken breasts, cut into chunks
  • 1 pineapple, cut into pieces
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Skewers (metal or soaked wooden)

Instructions

  1. Mix soy sauce, honey, minced garlic, salt, and pepper to create a marinade.
  2. Add chicken chunks to the marinade and let it sit for at least 30 minutes.
  3. Soak skewers in water if using wooden ones while the chicken is marinating.
  4. Preheat the grill.
  5. Thread chicken and pineapple pieces onto the skewers alternately.
  6. Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from grill and serve hot.

Notes

For a diabetes-friendly version, consider sugar-free alternatives for honey. Use fresh pineapple for the best flavor.
