Homemade Pickled Red Onions

Bright, tangy, and sweet pickled red onions that add a delightful crunch and flavor to your dishes.

Ingredients

  • 2 medium red onions
  • 4 cups boiling water
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 3 tablespoons honey (or sugar)
  • 1/2 teaspoon salt
  • 1 teaspoon peppercorns

Instructions

  1. Peel the red onions and slice them thinly.
  2. Transfer the sliced onions to a medium-sized bowl and pour boiling water over them. Let soak for at least 5 minutes.
  3. Drain the onions in a colander.
  4. In a separate bowl, mix the apple cider vinegar, water, honey, salt, and peppercorns.
  5. Add the drained onions to the marinade and let sit for at least 10 minutes.
  6. Transfer the pickled onions and marinade to jars with tight-fitting lids.
  7. Chill in the refrigerator until very cold. Enjoy!

Notes

Best enjoyed cold, straight from the jar. Store in an airtight jar in the fridge for up to 2 weeks.
