  • 2 large Eggs
  • 1/2 cup Sour cream (Plain full-fat Greek yogurt is a great substitute)
  • 1/2 cup Whole milk (Almond or oat milk can be used for dairy-free options)
  • 2 teaspoons Vanilla extract (Pure vanilla is recommended)
  • 1 cup Finely chopped pecans (Toast before adding to enhance flavor)
  • 1/2 cup Whole pecan halves (Choose fresh, quality pecans)
  • 1/4 cup Brown sugar (Pack for optimal texture)
  • 2 tablespoons Melted butter (Essential for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, mix the melted butter and brown sugar until creamy. Add the eggs, sour cream, milk, and vanilla extract, stirring until smooth.
  4. Gradually fold the dry ingredients into the wet ingredients, mixing just until combined. Be careful not to overmix!
  5. Gently fold in the finely chopped toasted pecans.
  6. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Top with whole pecan halves and sprinkle with brown sugar.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let cool in the muffin tin for a few minutes before transferring to a wire rack.
