  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh peaches, diced
  • 1 teaspoon cinnamon

  2. Cream together the softened butter and sugar in a large mixing bowl until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.

  5. Stir in the vanilla extract, diced peaches, and cinnamon until just combined.
  6. Pour the batter into the prepared bundt pan and smooth the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely. Enjoy your peach cobbler pound cake!
