Delicious gluten-free cookies bursting with white chocolate and colorful pastel M&Ms, perfect for spring celebrations.

  • 2 1/4 cups gluten-free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup pastel M&Ms
  • 1 cup white chocolate chips
  • 1/2 cup sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
  3. Cream together butter, granulated sugar, and brown sugar in a large bowl until smooth. Beat in vanilla extract and eggs until well combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Fold in pastel M&Ms, white chocolate chips, and sprinkles.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
