  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions.
  2. Drain the pasta and let it cool.
  3. Combine black beans, cherry tomatoes, corn, bell pepper, avocado, red onion, and cilantro in a large bowl.
  4. Whisk together olive oil, lime juice, cumin, salt, and pepper in a small bowl.
  5. Add the cooled pasta to the large bowl with the vegetables and beans.
  6. Pour the dressing over the top.
  7. Toss everything together until evenly coated.
