  • 2 chicken breasts
  • 8 oz penne pasta
  • 1 cup mushrooms, sliced
  • 1 cup asparagus, trimmed and cut into pieces
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken breasts and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Add mushrooms and asparagus to the same skillet. Sauté until tender, about 3-5 minutes.
  4. Add garlic and cook for another minute until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer.
  6. Stir in Parmesan cheese and mix until melted and smooth.
  7. Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Toss to combine, ensuring everything is coated with the sauce.
  8. Serve hot, garnished with fresh parsley.
