Delicious Paleo-friendly chocolate cookies with a rich flavor and gooey texture, perfect for any occasion.

Ingredients

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered coconut sugar
  • 1/4 cup chocolate chips (dairy-free if vegan)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix maple syrup and vanilla extract, then combine with dry ingredients until well blended.
  4. Chill the dough in the refrigerator for about 30 minutes.
  5. Scoop tablespoon-sized portions of dough and roll them into balls.
  6. Roll each ball in powdered coconut sugar until coated, then place on the prepared baking sheet.
  7. Bake for 10-12 minutes.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sugar-free option, consider using stevia, monk fruit, or allulose instead of maple syrup.
