Delightful gluten-free cookies bursting with the vibrant flavors of orange and the warm spice of ginger.

  • 1 portion (370g) Basic Cookie Dough Recipe
  • 3 ounces (85g) crystallized ginger (finely diced)
  • Zest of 1 orange
  • 3 tablespoons white coarse sanding sugar

Instructions

  1. Prepare your Basic Cookie Dough Recipe as directed.
  2. Fold in the finely diced crystallized ginger, ensuring it’s well distributed throughout the dough.
  3. Add the fresh orange zest, mixing thoroughly to infuse the citrus flavor evenly.
  4. Form the dough into a log shape, about 2 inches in diameter.
  5. Wrap the dough log in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Line a baking sheet with parchment paper.
  8. Slice the chilled dough log into even rounds, about 1/4 inch thick.
  9. Place the cookie slices on the prepared baking sheet, spacing them about 2 inches apart.
  10. Sprinkle the tops of the cookies with white coarse sanding sugar for a delightful finish.
  11. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  12. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
