A simple and healthy recipe for a one-pot chicken and rice dish that is gluten and dairy free.

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add chicken thighs and cook until browned on all sides.
  4. Stir in rice, chicken broth, mixed vegetables, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Cook for 20-25 minutes, or until rice is tender and chicken is cooked through.
  7. Fluff rice with a fork and serve hot.

Notes

  • For added flavor, marinate chicken in spices for a few hours before cooking.
  • Feel free to substitute vegetables based on your preference.
