A quick and gluten-free dish that combines smoky kielbasa with vibrant vegetables, all glazed with honey and garlic.

Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the kielbasa into bite-sized pieces.
  3. Prepare the vegetables by cutting the bell peppers into strips and halving the baby potatoes.
  4. Toss the kielbasa, bell peppers, baby carrots, and baby potatoes in a large bowl.
  5. Drizzle with olive oil and toss to coat.
  6. Mix the honey, minced garlic, and soy sauce in a separate bowl.
  7. Pour the honey garlic mixture over the kielbasa and veggies, tossing everything to ensure even coating.
  8. Spread the mixture out on a large baking sheet in a single layer for even cooking.
  9. Bake for 25-30 minutes, stirring halfway through, until the veggies are tender and the kielbasa is heated through.
  10. Remove from the oven and sprinkle with fresh parsley or green onions for color.
  11. Serve warm and enjoy with your loved ones!
