  • 1 lb asparagus, trimmed
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes, asparagus, and minced garlic in a large bowl with olive oil, oregano, salt, and pepper until evenly coated.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Roast for 20-25 minutes, flipping halfway, until potatoes are tender and asparagus is crisp-tender.
