Delicious and nutritious oatmeal muffins perfect for breakfast or a snack.

  • 1 cup rolled oats
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine rolled oats and milk, and let it sit for about 10 minutes.
  3. In another bowl, whisk together brown sugar, vegetable oil, and egg until well combined.
  4. Add the oat mixture to the wet ingredients and mix well.
  5. In a separate bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. If desired, fold in raisins or nuts.
  8. Divide the batter evenly among the muffin cups.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • These muffins can be stored in an airtight container for up to a week.
  • Feel free to substitute the raisins with chocolate chips for a sweeter treat.
