- 1 cup rolled oats
- 1 cup milk
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup raisins or nuts (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and milk, and let it sit for about 10 minutes.
- In another bowl, whisk together brown sugar, vegetable oil, and egg until well combined.
- Add the oat mixture to the wet ingredients and mix well.
- In a separate bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If desired, fold in raisins or nuts.
- Divide the batter evenly among the muffin cups.
