Soft, fluffy muffins with a luscious Nutella center rolled in cinnamon sugar, perfect for breakfast or as a sweet snack.

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1/3 teaspoon salt
  • 1/3 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg, slightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 1/3 cup Nutella
  • 3 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350F/180C. Grease a mini muffin pan with butter or cooking spray.
  2. Sift together flour, baking powder, cinnamon, nutmeg, and salt in a large bowl. Set aside.
  3. Beat together butter and sugar in a standing mixer on medium speed for 3 minutes.
  4. Add egg, vanilla, and milk, and mix until combined.
  5. Gradually add dry ingredients until just combined.
  6. Fill muffin cups by layering batter and Nutella or using piping bags.
  7. Bake for about 10 minutes or until a toothpick comes out clean.
  8. Allow cooling for 5 minutes, then dip tops in melted butter and cinnamon sugar mixture.

Notes

For best quality, serve the same day or freeze for up to 2 months. Use room temperature ingredients for optimal mixing.
