  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. In a large bowl, combine almond flour, rolled oats, ground ginger, cinnamon, nutmeg, and salt.
  2. Add maple syrup and melted coconut oil to the dry ingredients and mix until well combined.
  3. If desired, fold in chopped nuts and dark chocolate chips.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  6. Once set, enjoy your nourishing no bake gingerbread balls!
