A quick and indulgent mug cake that satisfies sweet cravings without compromising health. Ready in under two minutes!

Ingredients

  • 2 tablespoons maple syrup
  • 3 tablespoons milk (coconut milk recommended)
  • ½ teaspoon vanilla extract
  • ¼ cup almond flour (or gluten-free baking flour)
  • 2 tablespoons unsweetened cocoa powder
  • Pinch of sea salt
  • 1 tablespoon dark chocolate chips, plus more for topping

Instructions

  1. Whisk together the egg, maple syrup, milk, and vanilla extract in a 10-12 oz microwave-safe mug.
  2. Add the almond flour, cocoa powder, sea salt, and chocolate chips, and fold until smooth.
  3. Microwave on HIGH for 90 seconds. Check texture; it should spring back when pressed.
  4. Sprinkle chocolate chips on top and cool for 1-2 minutes. Optionally, top with powdered sugar, fresh berries, or ice cream before enjoying.
