A flavorful and gluten-free dish featuring succulent chicken breasts topped with Boursin cheese, cherry tomatoes, and spinach, perfect for weeknight dinners or gatherings.

  • 4 boneless, skinless chicken breasts
  • 8 oz Boursin cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 cup mozzarella cheese, shredded
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add to the skillet, cooking until browned on both sides.
  3. Mix the Boursin cheese, cherry tomatoes, and spinach in a bowl.
  4. Spread the cheese mixture on top of the chicken breasts, then sprinkle mozzarella cheese on top.
  5. Place the chicken in a baking dish and bake for 25-30 minutes until the chicken is cooked through and the cheese is bubbly.
  6. Garnish with fresh basil before serving.
